
Recipe:
My husband had something similar to this when he was staying with a family in France during a vintage car meet, it was served with slow cooked Turkey drumstick (see recipe).
This is a great side dish or could be a main dish.
The tomatoes bring Lycopene which is a powerful antioxidant responsible for their red colour (canned tomatoes actually have higher levels of lycopene compared to fresh) , Vit C, Beta Carotene and Flavonoids which all help reduce oxidative stress in our bodies.
Green beans are rich in Folate (Vit B9), are rich in fibre which not only helps you maintain healthy blood sugar levels, but also is great for gut health.
Garlic is another fantastic anti-inflammatory food because of its anti-oxidant properties.
But best of all this dish is so easy to make and is delicious !
You will need:
1 packet of green beans (Organic if you can) Topped & Tailed
2 cloves of garlic peeled and chopped
1 red onion copped finely
1 Tin of good quality chopped tomatoes (Organic are best)
Extra Virgin Olive oil
Black Pepper
Chicken or veg stock pot dissolved in 300ml water
Method:
-Gently fry the Onion & garlic in olive oil until soft
-Add the beans and tomatoes with the stock and simmer for 20-30 mins.
-Season with Sea salt & Black pepper.
-Serve as an accompaniment to slow cooked Turkey Drumstick (see recipe) or as a main meal at lunch with some delicious wholegrain sourdough bread.
