3 bean chilli

Recipe:

This recipe has a deliciously rich flavour and is fantastic for anyone who is used to eating mainly meat based dishes . You won’t miss the meat in this recipe because of the layers of flavour built into it , making it satisfying and the beans which make keep you full for a long time .

You will need:

Red kidney beans with water

Black eyed beans (drained )

Haricot beans ( drained )

1 onion chopped

2  cloves garlic chopped

1 carrot chopped

1 celery stick chopped

1 red pepper chopped

1 red chilli chopped ( remove seeds to reduce heat or leave them in for a kick )

3 large field mushrooms chopped

1 tin chopped tomatoes

1 tbs Hot smoked paprika

1 tbs Sweet paprika

2 tsp Ground cumin

2tsp Ground coriander

1 tbs oregano

Sea Salt & ground black pepper

2 squares of very dark chocolate (85% cocoa solids)

1 beef stock cube or stock pot ( or mushroom stock ) in 600ml water

1 tbs marmite

Olive oil for frying

Fresh coriander leaves to garnish

Method:

– Fry onions & Garlic in Olive oil

-Add the carrots , chilli , celery , pepper & mushrooms .

-Add tomatoes, and beans (include the kidney bean water) , spices, herbs, salt & pepper, chocolate, marmite  and stock.

-Simmer for at least 30 mins until the carrot & Celery are soft. 

-Taste the chilli and add more seasoning if required.

-The chilli should be rich and spicy.

-Serve with a sprinkle of coriander leaf.

Use this recipe and serve in wholemeal tortilla wraps with guacamole, soured cream, grated mature cheddar cheese and salsa.
