Broccoli with Miso glazed Wild Caught Salmon

Recipe:

This is a super quick recipe, delicious and full of antioxidants. You can make the salmon spicy with the addition of some hot paprika or some fresh chilli chopped very finely and you could add other greens to the stir fried Broccoli such as spinach, Kale or chard.

Add ginger & spring onion to compliment the Miso for a nice change.

You will need:

1 head Broccoli florets or Purple sprouting broccoli

2 Garlic cloves chopped

Juice from 1 lemon

25g Butter

Olive oil

Sea Salt

Black pepper

Grate Parmesan for garnish

4 Wild caught salmon fillets skin on

Miso paste ( red or white)

4 tbs Sesame oil

2 tbs Brown sugar

4 tbs soy sauce

1 lime cut into 4

Method:

-Preheat oven to 190 degrees, Gas mark 5.

-Place the Salmon skin side down on a lightly oiled baking tray.

-Add the Broccoli, garlic, & butter, drizzle with olive oil and season with sea salt and ground black pepper.

-Make the miso glaze by mixing the miso paste, sesame oil, brown sugar and soy sauce.

-Drizzle half on to the flesh side of the salmon.

-Bake for 10 mins and then add the rest of the glaze with a pastry brush.

-Cook for a further 10 mins.

-Serve The broccoli with a squeeze of lemon & Grated Parmesan and place the salmon on the plate skin side up with wedges of lime.

You could also add some toasted sesame seeds.
