Cashew & Date balls

Recipe:

These small balls of deliciousness are very quick and a great go -to for those days when you crave something sweet and feel in need of an energy boost. You may not know that Cashews are high in Copper which is essential for a healthy immune system, brain development and energy production, also high in unsaturated fats.

You will need:

100g Cashew Nuts

150g Pitted Dates

4 tbs Desiccated coconut .

Method:

-Place Nuts & Dates in a food processor.

-Whizz them up until the Cashews release their oil and the mixture starts to bind together.

-Tip onto a work service and weigh out into 20g amounts.

-Roll into balls into the palm of your hand (this is quite a messy process…but fun) roll each ball in some desiccated coconut.

-Leave in the fridge to firm up.

-They will last about a week in the fridge (if you can manage not to eat them all !!)

Try to limit yourself to 2 a day because the dates may have a laxative effect and they are quite high in sugar (albeit natural sugar) and high in calories.

You can add other types of nuts and seeds and swap out some of the dates for other dried fruits.
