
Makes 8 slices dependent on puff pastry sheet
Recipe:
If you want to make a very quick, very easy dessert that also happens to yield impressive results– look no further!
1 sheet of ready made puff pastry
1 egg for egg wash & paste
Handful of cherries or fruit of choice
140g Ground Almonds
1/2 Teaspoon Almond Extract
50g Icing Sugar
1 Tablespoon Milk
Method:
-Preheat oven to 180 C
-Use the baking paper that is usually in the puff pastry packet and lay the pastry out flat.
-Cut the pastry in to squares and then score a smaller square, being careful not to cut through this time – I managed to get 8
-In a bowl combine the egg white, Ground almonds, Icing Sugar, Almond extract- this should create a spreadable paste. If it is too thick add a splash more milk.
-Spread a thin layer of the paste onto the pastry within the scored square
-Halve the fruit and place on to the paste (flesh side down)
-With the remaining egg yolk, either with your finger or using a pastry brush- egg wash all visible pastry (should be just the sides of each piece)
-Bake in the oven for 15 minutes, keeping an eye to make sure the sides don’t catch
-Leave to cool and dust with Icing sugar to finish.
These pastry puffs pair nicely with some Greek yogurt and honey or just on their own with a nice cup of Tea!
