
Recipe:
I saw this recipe on Doctorbowl today and I was a bit sceptical, but I had to give it a try… and it works!!
It has 3 ingredients and is extremely indulgent in terms of calories, but each ingredient is anti- inflammatory so it’s a great alternative to other rich chocolate cakes, containing no butter, eggs or additional sugar.
Just a warning, it’s not something to eat in the evening as it will contain quite a bit of caffeine and will definitely keep you awake!!
A lovely treat to eat with a cup of tea when you are putting up the Christmas tree.
You will need:
400g Very Dark chocolate – 75% or more
6 Apples with skin on
2 tbs Tahini or peanut butter
Cinnamon to serve.
For the glaze
4 tbs of Maple syrup (Buy the best you can afford)
2tbs Balsamic vinegar
1 Tsp Miso paste (Brown or white)
1tbs extra virgin Olive oil
Pinch sea salt
Freshly ground black pepper
Hot smoked paprika (Optional)
Method:
-Line a spring form cake tin or round serving bowl with parchment.
-Chop the apples with skin on, place in a pan with 300ml water.
-Simmer for 10-12 mins with a lid, until the apple is soft and shiny (this means the pectin has been released which will help set the mousse)
-Remove the lid and continue to simmer until nearly all the water is gone.
-Add the chocolate until it melts and add the Tahini or peanut butter.
-Mix well and then blend using a stick blender until smooth and creamy.
-Pour into the lined tin or serving bowl.
-Place in the fridge until set.
-Sprinkle with Sieved cinnamon and serve in small slices.
