
Recipe:
This is a wonderfully simple tasty dish which is very easy to tweak depending on what ingredients you have in the fridge.
This my own take on a Spanish (Asturian) dish which we first had on a family holiday in Northern sprain, it is usually made with haricot beans rather than Chick Peas (but I love the nutty taste of chickpeas and their slightly firmer texture)- you chose which type of beans you use .
The traditional recipe would not have any meat other than a good quality Chorizo as it is more of a peasant style of dish, again, adapt it to your taste – that’s the fun of cooking !
You will need:
1 Tin Tomatoes
1 Onion chopped
1 Garlic chopped
2 Tsp Smoked hot paprika
2 tsp Mixed herbs
1 Carrot chopped
1 Courgette chopped
1 Pepper chopped
1 Tin Chickpeas
1 stick Celery chopped
1 stock cube or pot (Chicken, Veg or Fish)
¼ Spicy chorizo chopped
Add chopped Chicken breast, thigh or Prawns, White fish, or non of these
Fresh Basil leaves
Grated Parmesan
Olive oil
Method:
-Fry Onions, Garlic, Chorizo (if using) Pepper, Courgette, Carrot, Celery until slightly softened.
-Add Tomatoes & Chickpeas (or white beans), Stock, Paprika and herbs.
-If using Chicken, Fish or Prawns, add them at this stage and cook for 10-15 mins until they are well cooked.
-Serve with fresh basil leaves – torn , grated parmesan and a glug of olive oil .
