Recipe:
I love this recipe for the colours and the Citrus dressing which gives it a zesty zing! Much nicer than a heavy Mayo based version in my mind and so much better for you.
If you want to use a whole red cabbage you could make a larger batch by doubling everything and keep it in the fridge to use for a few days in a sealed container, it makes a great accompaniment to any meal, it is full of anthocyanins (plant colour pigments which are anti – inflammatory and great for gut , brain and heart health) it is also packed with fibre.
You will need:
Half a red cabbage- grated or finely shredded
½ Large red onion cut in half and finely shredded
1 Carrot cut using a veg peeler into thin strips
1 Clove garlic chopped or crushed
1 Inch ginger grated or chopped
1 Red apple (don’t grate until the end)
1 Lemon rind & juice
50ml Olive oil
2 Tablespoons Soy sauce or Ponzu
1 Tablespoon Fish sauce (optional for a vegetarian /vegan version)
Salt & pepper

Method:
– In a large bowl toss the Cabbage, Onion and Carrot together.
-Make the dressing by adding Olive oil, Ginger, Garlic, Lemon juice & rind, Soy sauce or Ponzu, Fish sauce and Salt & Pepper.
-Whisk together to combine. (You can add a small amount of Dijon or English mustard to emulsify the dressing if you wish)
-Pour the dressing over the Cabbage mixture.
-Grate the Apple into the bowl and mix it in. Easy Peasy !!
You could add Sultanas, Walnuts , Sesame Seeds to make this a little different. You can also swap lemon for lime for a more oriental slant.
