
Recipe:
I absolutely love Avocado and the combination of the complex flavour of Lime, fresh Coriander leaves and Garlic with a touch of Chilli and Cumin are just so moreish!
This is my take on a very traditional Mexican dish and you can serve it with a chilli in a wholemeal tortilla, with salad, in a lovely breakfast bowl with Salmon or just eat eat with Carrots sticks, Cucumber, Celery a bit like Humus
You will need:
1 large ripe Avocado mashed or chopped
1 Garlic clove crushed
1 small Onion chopped
2 fresh Tomatoes chopped
1 Lime juice and rind
A small bunch of Coriander leaves to taste & some to garnish. Chopped
1 Red Chilli
Pinch salt
Pinch ground Coriander
Method:
-I like to keep my Guacamole quite chunky, so I chop everything by hand. -Once you have chopped the avocado squeeze the lime juice over it to prevent it going brown and then mix it together with all the other ingredients in a bowl.
-Use a food processor if you like it smooth.
-Sprinkle with some chopped coriander leaves.
To make a fresher tasting version use spring onions instead of ordinary onions
