
Recipe:
This is a lovely flexible recipe for a quick easy and filling breakfast.
You will need:
4 Eggs
1tbs of fresh herbs ( parsley , basil , coriander )
Or 2 Tsps dried mixed herbs
3 tomatoes halved
Freshly ground black pepper
Pinch sea salt
Olive oil
Method:
-Heat the oil in a frying pan and fry the tomatoes until softened and slightly browned.
-Beat the eggs with herbs salt & pepper.
-Place the tomatoes on a warm plate
-Poor the egg mixture into the pan and stir gently with a wooden spoon until the egg that sets on the base of the pan moves to enable the uncooked egg to flow into the space.
-Stop stirring when it is nearly cooked to allow it to set.
-Cut into 4 and serve with the tomatoes.
You can add other ingredients to make the omelette more substantial such as spinach, grated parmesan or cheddar.
