
Recipe:
This is my take on a lovely coleslaw I had at a family barbeque earlier this year.
It went down well with everyone, and I’ve reproduced it several times since with a few tweaks.
Yesterday I made it again for a large family gathering and it was a hit, especially in the hot weather!
Make your own tweaks and let me know how they worked!
You will need:
1 small celeriac or half a large one peeled
1 small red cabbage
1 red onion
1 fennel root
1 small white cabbage (optional)
2 carrots (or 1 large one)
Ginger (1 inch) optional
Natural yoghurt 300ml
Horseradish sauce – 3 large tbs
Squeeze lemon juice or lime juice
Salt & Pepper to taste
1 bunch Fresh parsley roughly chopped
1 bunch Fresh Mint to taste roughly chopped
2-3 spring onions (optional)
Method:
You can either chop or finely slice all the veg by hand…But who has the time for that ?! So I just use a food processor and chop/ grate or shred the top 5 ingredients!
Place in a large bowl and add the yoghurt, Horseradish, lemon or lime juice, seasoning and finish with the fresh herbs.
Adjust seasoning to taste and add more yoghurt if required.
To change this recipe up you could also add dill, fennel leaves, coriander depending on your taste and if you like more spice add a sprinkle of cayenne or some fresh chilli.
