Roasted Carrot & Sweet Potato Soup

Makes 2 – 4 large portions depending on consistency

Recipe:

This silky smooth, super versatile soup is perfect for a dinner party starter, everyday dinner or warming lunch.

You can add a pinch of chilli or cayenne pepper if you want to spice it up.

500g Sweet Potatoes

300g Carrots

3 tbsp Olive Oil

2 Onions

4 Garlic Cloves

1L Vegetable Stock

100ml Crème Fraiche

Method:

-Chunk the Sweet Potatoes, carrots and Onion. Place on a baking tray with some Olive Oil, Garlic (2 cloves) and seasoning.

-Add roasted veg to a medium pan

-Add 2 crushed garlic cloves and stir for 1 min before adding 1l vegetable stock.

-Leave to cool a little, then use a hand blender to process until smooth.

-Stir in 100ml crème fraîche, a little more seasoning and reheat until hot.

-Serve in bowls topped with a swirl of crème fraîche and a good grinding of black pepper.

Try mixing up this soup with other root vegetables like Butternut Squash and Parsnip!
