
Recipe:
I love this recipe at any time of year , but if you love Turkey like I do you can cook it in the run up to Christmas to really get you in the festive spirit.
Turkey is a fantastic source of Tryptophan which is a precursor (helps to make) Serotonin (our mood hormone) and Melatonin (the hormone that sends you off to sleep) there is a theory that this is why we all feel so sleepy after a large Christmas feast… personally I think this is more about everything that goes with the Turkey such as copious amounts of alcohol! 😁
The alcohol in this recipe will cook down and give you a lovely sweet flavour which compliments the other savoury ingredients.
You will need:
1 Turkey Drumstick
¼ Bottle of white wine (use a decent one)
1 large onion chopped
2 Cloves garlic chopped
1 carrot copped roughly
1 Stick celery chopped
2 Bay leaves
1 Bouquet garnet or mixed herbs
1 Chicken stock pot
500ml water
Extra Virgin olive oil
Method:
-Preheat the oven to 180 degrees – Gas mark 4
-In a large casserole or oven proof dish brown the drumstick on all sides on a medium heat.
-Remove the drumstick onto a plate and fry the onion, garlic , carrots and celery for 5 mins.
-Add the White wine and stock and bring up to a gentle simmer, add the Bay leaves , herbs (or Bouquet Garnet) and season with Black pepper and sea salt .
-Place the drumstick back into the liquid, bring the liquid back to a boil and place the casserole in the oven with a lid for 1 hour 30 mins.
-Serve with Brown rice and Mediterranean green beans (see recipe)
You can add more vegetables to the Casserole to make it more substantial e.g.: Add Potatoes, halved with skin on or any other veg you fancy.
