
Recipe:
Avocado is a fantastic source of plant based B vitamins which are great for mood and important for energy production. They also contain Vitamin E & C, both great antioxidants, great for your skin & Eyes and your gut health.
If you are working with me on my 12 week program and i have suggested limiting eggs in your diet, you can serve this with some lightly wilted spinach drizzled with olive oil and seasoned with Ground black pepper and a touch of grated nutmeg .
You will need:
Half an Avocado
1 tsp Cumin
Juice of ½ a lime
¼ Tsp Ground Cayenne or Hot smoked paprika
1 good quality egg ( or some baby leaf spinach lightly wilted in a steamer )
Olive oil
Sour dough bread toasted
Method:
-Smash the avocado in a bowl, squeeze on the lime juice and season with cumin, cayenne or paprika and some ground black pepper and sea salt.
-Spread the avocado onto toast (you won’t need butter) Drizzle with a little olive oil.
-Fry the egg in a little olive oil or poach in water.
-Serve on top of the smashed Avocado with a pinch of sea salt and some ground black pepper.
For Different breakfast you could replace the egg with some feta cheese crumbled over the avocado or add some cherry tomatoes cut in half and seasoned with black pepper and mixed herbs, drizzle with Olive oil.
