Spinach Borani

Recipe:

This is a very simple recipe which one of my lovely friends always prepares when we go to her beautiful flat in Bristol for a feast, She is originally from Iran and she is one of the best cooks I know (I know a lot of very good cooks !!) this is served as part of a type of mezze which is a lovely selection of dishes served before the main course.

This one can be served with flat breads or with other things to dip. It can also be served along side a curry or other main dish.

You will need:

Natural Bio-live yoghurt 150 ml

1 clove garlic crushed

Frozen or fresh baby spinach leaves (large handful or 3 frozen chunks)

Method:

-Steam Spinach with Garlic and a very small amount of water, allow to cool.

-Add to Yoghurt and mix well.

-Season with Salt & Ground pepper to taste.

You can season this with Cumin & Coriander and a touch of chilli.
